To speak of summer in the vineyard is to speak of the harvest. Long hours of light and increased temperatures will condition the ripening of the berries, their sugar levels and acidity. Thanks to rigorous ripening controls, we know the exact moment to carry out the harvest -manual and night- in order to harvest the grapes in their optimal state.
